The Moraschi family has been involved in viticulture since the second half of the 19th century. The first vine-dresser was Bortolo Moraschi, born in 1846.
The family-run company was subsequently founded in the first half of the 1990s by brothers Oliviero and Giuseppe Moraschi, assisted by Oenologist Alessandro Santini. Thanks to them, the first D.O.C. and D.O.C.G. were created.

The main feature is the second fermentation in the bottle, which occurs during a refinement period where the bottles are stacked and the wine is left to mature in contact with the yeasts for at least 18 months.
After this long wait, we arrive at "remuage": a technique aimed at gently moving the sediments near the crown cap so as to allow its expulsion through disgorgement or "degorgement". The process culminates with the topping up, the addition of the liqueur d'expédition and capping.
